Crumbs: chicken cordon bleu

With the stay at home order in place we have more time than ever to try out new things in the kitchen. This week I decided to try out Chicken cordon bleu. A semi complicated recipe that tastes delicious. Serve with a salad and you’ll have a great dinner that you’ll be proud of. 

Prep time: 15 minutes

Cook time: 40-45 minutes

Servings: 2

Ingredients

  • 2 chicken breasts
  • Sliced Swiss cheese (as many as desired)
  • Sliced ham  (as many as desired)
  • Panko bread crumbs, or any bread crumbs of your choice.
  • 2 eggs
  • Garlic salt and your choice of seasoning

Directions

  1. Preheat oven to 375 degrees.
  2. Pound out the chicken into thin slices using a roller or a meat tenderizer.
  3. Place cheese and ham on top of the chicken and roll it up. Use toothpicks for the roll to stay in place. Top with garlic salt or seasoning of your choice.
  4. Scramble the eggs and coat chicken in that. Add the bread crumbs.
  5. Place in the oven and bake for 40-45 minutes or until the chicken reaches 165 degrees on the inside.
  6. Let cool and enjoy.
