Crumbs: pumpkin cookies

If you miss pumpkin spice season and just want that taste back, here is the cookie recipe for you. This easy recipe will take you back to pumpkin spice season in no time.

Cook Time: 15 minutes

Servings: 1 dozen

Ingredients:

  • ¼ cup butter (softened)
  • ¼ brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup pumpkin puree
  • 2 cups flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine softened butter and sugar until completely combined.
  3. Add egg, vanilla and pumpkin puree and mix.
  4. Add flour, baking powder, salt and cinnamon and mix.
  5. Spoon dough onto a cookie sheet and bake for 10-15 minutes.
  6. Remove from cookie sheet, let cool and enjoy.
