Simple Granola

Ingredients:

  • 2 cups brown sugar
  • ½ cup water
  • 2 tablespoons butter
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon
  • 8 cups old-fashioned oats
  • 1-2 cps chopped nuts
  • 2-4 cups assorted dried fruit

Instructions:

  1. Preheat oven to 275 degrees. Combine brown sugar, water and butter in a small bowl. Microwave for 5 mintes.
  2. Mix in vanilla and cinammon. In another large bowl, mix oats, nuts and sugar mixture.
  3. Divide oats onto 2 cookie sheets. Bake each for 45 minutes to an hour, or until the mixture is golden brown. Stir granola every 15 minutes so it doesn’t burn.
  4. Once the mixture is cool enough to eat, mix in dried fruit. Enjoy.

Optional Ad-Ins: Flax seeds, dried mangoes or pineapple, white chocolate, dark chocolate or butterscotch chips, or M&M’s candies.

Simple granola recipe No. 2

Ingredients:

  • Coconut Twist Granola
  • 4 cups old-fashioned rolled oats
  • 1 cup sliced almonds
  • ½ cup shredded unsweetened coconut
  • ¼ cup hulled or unhulled pumpkin seeds
  • ½ cup maple syrup
  • 2 tablespoons canola oil
  • ½ teaspoon kosher salt
  • 1 cup dried fruit like cherries, raisins, currants, cranberries or pineapple chunks

Instructions:

  1. Preheat oven to 350 degrees. In a large bowl, mix the oats, almonds, coconut and pumpkin seeds with the maple syup, oil and salt.
  2. Bake, stirring every 15 minutes so it doesn’t burn, until the granola is golden and crisp. This takes about 25 to 30 mintues.
  3. After the granola is crisp, remove it from the oven and let cool. Finally, mix the dried fruit with the fresh granola. Enjoy.
