This pasta isn’t called “marry me” pasta for no reason. This delicious and simple recipe is sure to wow your friends and family, and it’s definitely a keeper recipe! This pasta packs a unique and savory punch of flavor despite being so simple to make.

Ingredients:

  • 1-2 chicken breasts
  • Noodles of your choice Garlic powder
  • Smoked paprika
  • Cayenne pepper
  • Black pepper
  • Italian seasoning
  • Chicken bouillon powder
  • 1 tbsp. oil
  • 1 tbsp. butter
  • 1 onion (diced)
  • 1/4 c. sun-dried tomatoes (chopped) and 1 tsp. of the oil
  • 1 tbsp. tomato paste
  • 1-2 c. pasta water*
  • 1-1 1/2  c. heavy cream
  • A handful of spinach
  • 1 c. mozzarella (shredded)**

Directions:

  1. Start boiling water for your noodles.
  1. While you wait for the water to boil, chop your chicken into slices or bite-sized pieces, dice your onion and shred the mozzarella.
  1. Once the water has come to a boil, put your pasta in and let it cook. Let cook according to your pasta instructions.***
  1. While the pasta is boiling, mix all the seasoning together with one tablespoon of oil. Mix well then spread onto your chicken.
  1. Pan fry the chicken in butter.
  1. Once the chicken is fully cooked (the internal temperature should be 165 degrees Fahrenheit), take it out of the pan and set aside. Throw in the diced onion, sun-dried tomatoes and oil and tomato paste into the pan.
  1. Mix it all together and cook until the onions are translucent.
  1. Add in the pasta water and cook down until all the water has evaporated.
  1. After that has cooked down, add the heavy cream, spinach and mozzarella cheese.
  1. Once combined, add in the pasta noodles and serve with chicken.
  1. Enjoy!

Chef Notes:

*It’s approximately one cup, but it should be enough to cover the things in the pan. It will boil down regardless of the amount, but the time it takes will depend on how much water you use.

**Freshly shredded mozzarella should be used. Pre-shredded cheese has a coating that prevents the cheese from clumping, which makes the cheese not melt as well as freshly shredded.

***Each pasta noodle comes with slightly different cooking times, so the amount of time you boil it will depend on the pasta that you choose. Check the box for proper cooking times.
