Crumbs: Lemon Chickpea Soup 

A warm and delicious soup

Everyone loves a good soup, and this one is perfect for days when you’re sick or just craving something warm! It’s the perfect combination of flavors that is sure to make you feel great and satisfy your soup craving. The strong lemon flavor mixed with the savory taste of the chicken broth creates a wonderful combination and all the other ingredients pack in extra flavor to make a perfect soup! 

Ingredients: 

  • ½ yellow onion (diced) 
  • 1 ½ cans chicken broth 
  • 2 cloves garlic (minced) 
  • 1 can chickpeas (rinsed) 
  • 3 tablespoons lemon juice 
  • ¼ cup olive oil 
  • ¼ teaspoon cayenne pepper 
  • A dash of oregano  
  • A dash of lemon pepper 
  • Salt and pepper to taste  

Directions: 

  1. Sauté onion and garlic in a tablespoon of olive oil until partially softened. 
  1. Add ½ can of chicken broth and ¼-½ of the chickpeas. 
  1. Partially blend the onions, garlic, chickpeas and chicken broth with an immersion blender until slightly chunky.  
  1. Let simmer for 10 minutes. 
  1. Add the rest of the chicken broth and chickpeas. 
  1. Add in salt, pepper, lemon pepper, oregano, the ¼ teaspoon of cayenne pepper and the 3 tablespoons of lemon juice. 
  1. Mix together and add in the remainder of the olive oil. 
  1. Cook for 5 minutes and serve immediately. 
  1. Enjoy!
