Crumbs: Apricot Cobbler Cookies

Comforting summer treat to make the most of the season

It is finally the season for fresh fruit, and the farmer’s market in Moscow this week was brimming with fruits and vegetables, including some sweet and delicious apricots. If you find yourself with an overabundance of apricots this summer, these cookies are a perfect way to transform them into an easy dessert that everyone will love. The recipe also works with fresh peaches, and the cookies are delicious when paired with some vanilla ice-cream as a fun twist on regular peach cobbler.  

Ingredients: 

  • 1 cup chopped fresh apricots (or peaches) 
  • 1 cup sugar 
  • 1 cup butter (softened) 
  • 1/3 cup brown sugar 
  • 1 egg 
  • 2 tsp vanilla extract 
  • 3 cups flour 
  • 1 tsp cream of tartar 
  • 1 tsp baking soda 
  • ½ tsp salt 
  • 2 tsp cinnamon 

Directions: 

  • Cream together butter and sugars until fluffy, beat in egg and vanilla until well mixed 
  • Whisk together flour, cream of tartar, baking soda, salt and cinnamon 
  • Slowly add flour mixture into the creamed mixture, mixing until combined, stir in apricots 
  • Form dough into balls and place on a greased baking sheet, bake at 350 degrees for 15 minutes, or until set
