Crumbs: Easy and cheap tuna cakes with potato wedges

If midterms have you stressed to the bone, and maybe you’ve been forgetting to feed yourself, here is your friendly reminder that you need to consume something other than a Redbull. You can whip up these tuna cakes in no time.  

Prep time: 45 minutes  

Servings:

Ingredients: 

One can of tuna  

One potato  

One egg  

½ cup of bread crumbs  

One tablespoon of mayonnaise  

One tablespoon of mustard  

¼ cup of shredded parmesan  

Sprinkle of garlic powder  

Salt and pepper to taste  

Olive oil  

Directions: 

  1. Preheat oven to 425 degrees. 
  1. Cut potato into desired size of wedges. 
  1. Lay out wedges on a parchment paper covered baking sheet. 
  1. Cover in olive oil, garlic powder, onion powder and salt and pepper. 
  1. Place in oven for 15 minutes.  
  1. Place a large pan on medium heat. Add olive oil to pan.  
  1. Add egg, bread crumbs and parmesan in a bowl and mix. 
  1. Drain can of tuna and add to mixture, along with mayonnaise, mustard, garlic powder, onion powder and salt and pepper. Mix until thoroughly combined.  
  1. Take spoonfuls of tuna mixture and mold into palm-sized patties.  
  1. Add to pan and cook, flipping every few minutes until browned on both sides.  
  1. After 15 minutes of baking, flip potato wedges to other side.  
  1. Add onion powder, garlic powder and salt and pepper and place back in the oven for another 15 minutes.  
  1. Serve and enjoy.
