Traditional Colcannon Irish Potatoes for St. Patty’s Day  

Celebrate St. Patty’s Day with an Irish (and Idaho) Staple

With St. Patrick’s Day coming up soon, you may be looking for something festive to pair with your “Kiss me, I’m Irish” shirts. Here is a cheap and easy recipe to get a good potato fix!  

Prep time: 30 minutes 

Servings: 2 

Ingredients:   

5 red potatoes 

Half a head of cabbage 

Green onions 

Garlic powder  

Parsley  

¼ cup of milk 

3 tablespoons of butter  

Salt and pepper  

Directions:  

  1. Finely chop or shred half a head of cabbage. 
  1. Add cabbage to 2 cups water in a large saucepan and bring to a boil. 
  1. Lower heat to medium, cover pot, and let simmer for 10 minutes. Stir every few minutes. 
  1. Chop potatoes into 1- inch cubes, and finely chop green onions. 
  1. Strain cabbage and put to the side but pour the water back into the pot. 
  1. Add your potatoes, and add water so potatoes are covered. 
  1. Boil, covered, for 10-15 minutes, or until potatoes are soft. 
  1. Drain potatoes, and finely mash. 
  1. Add milk, butter, garlic powder, salt and pepper and mix. 
  1. Add in cabbage thoroughly mix. 
  1. Top with parsley and green onions and enjoy.
