Did you know that Campbell’s broccoli cheese soup is vegetarian? Being a Panera fan, I decided to take my own spin on their new broccoli cheddar mac and cheese. The result was delicious, and I would go so far as to challenge Panera, but I’ll let you be the judge of that.

Prep time: 20 minutes

Servings: 1

Ingredients:

½ cup of pasta of choice

½ cup of Campbell’s condensed broccoli cheese soup

¼ cup of milk

½ cup of frozen broccoli florets

¼ cup Parmesan cheese

Directions:

  1. Boil water in a medium saucepan.
  1. Add pasta to billing water and cook until soft.
  1. Drain the water and put pasta back on medium heat.
  1. Add the milk and soup and stir until combined.
  1. Add broccoli florets, stir, and cover.
  1. Let it simmer for about 5 minutes, stirring every few minutes until broccoli is soft.
  1. Top with parmesan cheese and enjoy!
