Crumbs: very noodle chicken soup

Learn how to cook Kalguksu from scratch and impress friends

Chicken noodle soup | Emily Pearce

Serving size: 8 servings 

Cook time: 2 hours  

Ingredients: 

1 lb. chicken breast 

5 garlic cloves 

1 onion 

1 lb. noodles  

1 zucchini  

1/4 teaspoon salt 

1/4 teaspoon pepper 

Chives  

2 tbs sesame oil 

Chicken stock  

Directions:  

  1. Roughly chop an onion and peel garlic cloves.  
  1. In a large pot add water, chicken breast, garlic and onion. Bring to a boil and cook until chicken is cooked through. 
  1. Thinly slice zucchini into strips, mix with salt and let sit for 10 minutes. 
  1. In a separate pan, add sesame oil and fry zucchini until soft. 
  1. Strain chicken, onion and garlic from water. 
  1. In a separate bowl, mash garlic, 1 tbs sesame oil and pepper. 
  1. Separate chicken with two forks into strips. 
  1. Boil noodles in chicken stock until al dente. 
  1. Add chicken, zucchini and mashed garlic into the pot and incorporate.  
  1. Thinly slice chives and add as a garnish.  
  1. Serve while warm or store in the fridge for up to three days.
