No-bake eclairs

Desserts are some of the best things in life, but often take the most time to make — especially anything from scratch. Having a dessert that doesn’t need to be baked and can last quite a while is always a good thing.



  • 2 (3.5 ounce) boxes vanilla instant pudding
  • 3 cups milk
  • 1 (8 ounce) container Cool Whip
  • Graham crackers


  • 1/3 cup unsweetened cocoa powder
  • 1 cup sugar
  • 1/4 cup milk
  • 1/2 cup butter or margarine
  • 1 teaspoon vanilla


For the filling:

  1. Combine pudding mix and milk; beat. Stir in Cool Whip.
  2. Place a layer of graham crackers in the bottom of a 9 by 13 inch dish
  3. Spread 1/2 of the pudding mixture over the graham crackers. Repeat with another layer of graham crackers and pudding; then top with a final layer of graham crackers

For the topping:

  1. Bring cocoa, milk and sugar to a full rolling boil; boil about 1 minute, stirring frequently
  2. Remove from heat and cool one minute. Add butter and vanilla; stir until butter is melted
  3. Pour chocolate topping over top layer of graham crackers
  4. Refrigerate over night
