Alfredo chicken biscuits

During the holidays, it can be stressful to cook small meals for yourself in between all of the large family gatherings that entail endless bouts in the kitchen. Here is a simple recipe for when lunch deserves just a smidgen of effort.


  • Can of 8 refrigerated biscuits
  • 1/2-cup alfredo pasta sauce
  • 1 cup shredded mozzarella cheese
  • 1 small rotisserie chicken
  • 1 cup baby spinach



  1. Preheat oven to 375 degrees Fahrenheit
  2. Place biscuits on baking sheet giving them enough room to expand
  3. Evenly spread dollops of sauce on each biscuit
  4. Pull apart chicken and put shredded pieces on saucy biscuits as heavily as desired
  5. Sprinkle generous amount of mozzarella over chicken
  6. Place spinach leaves sporadically over biscuits keeping in mind that the leaves will shrink
  7. Bake for 13-15 minutes or until biscuits are golden brown
  8. Let cool and enjoy
