The first thing everyone thinks about when October rolls around is pumpkins and Jack-o-lanterns, but did you know pumpkin is actually a berry? Like sunflower seeds and tomatoes, pumpkins are actually fruit — and just about every part of this amazing fruit can be eaten.
Pumpkin seeds

After carving the pumpkin, don’t discard the seeds. With a little bit of butter, salt, pepper and perhaps a little red pepper for those adventurous types, roasted pumpkin seeds can be made into a nice and easy snack.

Pumpkin pie

Yes, pumpkin pie filling can be made from real pumpkins. It doesn’t have to be bought in a can. All it takes is a hot oven, a food processor, an extra hour and some oil. Of course it won’t have all the processed food, sugary goodness that pumpkin pie has come to epitomize, but it is still good. Everyone smothers pumpkin pie with whipped cream anyway.

Pumpkin bread

The least-known edible option for pumpkin leftovers is pumpkin bread. It is a little like zucchini bread or some other gourd-bread, but it can easily be combined with some salted caramel icing and made into a sweet dessert option or breakfast for the sugar addicts.
