Chicken can be a fun ingredient to use.
It can be made into pasta salad (link) or stuffed with peppers and wrapped in bacon (link). However, for those who are more health conscious and want somewhere in between bacon wrapped and healthy salads, this recipe is for you. Marinara sauce can also be spooned over the top with cheese at step 12.

Ingredients:

  • 1 pound chicken breast
  • 1 egg, beaten
  • 1 cup Italian bread crumbs
  • 5 ounces fresh spinach, rinsed
  • 1 sweet pepper, sliced
  • 6 slices fresh mozzarella cheese

 

Directions:

  1. Oil the bottom of a baking dish and preheat oven to 450 degrees Fahrenheit
  2. With a meat tenderizer, or something equally hefty, flatten the chicken breast as much as possible
  3. Salt and pepper one side, later referred to as the inside, of each chicken breast
  4. Lay one slice of mozzarella on the inside tip
  5. Place desired amount of pepper and spinach on top of cheese
  6. Top off with another slice of mozzarella
  7. Roll one end of chicken towards the other, doing your best to keep the stuffing inside
  8. Grasping the seam firmly, dip chicken first into the egg and then the breadcrumbs
  9. When placing chicken roll into baking dish, place it seam side down
  10. Repeat steps 3–8 with remaining chicken
  11. Bake for 25 minutes
  12. After 25 minutes, top with remaining mozzarella and add a sprinkle of oregano
  13. Bake for 3–5 minutes more until the cheese melts
