This recipe was one of my favorites when I was young, and I would beg my mom to make this nearly every Saturday or Sunday morning. Eventually, she showed me the recipe and helped me make my first one while I was in middle school. While I have the recipe, I still prefer to make it only on particularly calm weekend mornings. It makes it all the more special to share over a warm cup of tea, coffee, hot chocolate or cider.

Ingredients

Streusel:

  • 1/3 cup brown sugar
  • 1/4 cup flour
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons firm butter

Batter:

  • 2 cups flour
  • 1 cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/3 cup butter, softened
  • 1 cup milk
  • 1 egg
  • 1/2 teaspoon vanilla

 

Directions:

  1. Heat oven to 350 degrees Fahrenheit
  2. Grease a 13×9 inch or 9×9 inch baking pan
  3. Prepare streusel by mixing all ingredients until crumbly
  4. Beat remaining ingredients in a large bowl, scraping the sides down occasionally
  5. Spread half of the batter in the bottom of the pan
  6. Sprinkle with half of the streusel
  7. Top with remaining batter and streusel
  8. Bake 35-40 minutes
  9. Best served warm with coffee or tea
