My favorite ice cream has always been mint chocolate chip. It was one of those things my dad and I always shared together. While perusing an old cookbook on my shelf, I came across this recipe for mint chocolate chip cookies. To create a mintier look, add a little bit of green food coloring to the dough prior to putting the chocolate chips in.

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 3/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup butter or margarine, softened
  • 1/2 cup shortening
  • 1 egg
  • 1/2 teaspoon mint extract
  • 1 cup mint chocolate chips

Directions:

  1. Preheat oven to 350 degrees Fahrenheit
  2. In a large bowl, cream the butter, shortening and sugar until light and fluffy
  3. Add egg and mint, mix well
  4. In separate bowl combine flour, baking powder and baking soda
  5. Gradually add to creamed mixture
  6. Mix in the chocolate chips
  7. Shape into 1-inch balls and place on a foil lined baking sheet
  8. Cook for 8-10 minutes, or until bottoms are golden brown
  9. Cool and enjoy
