Sit back and enjoy a little Thai flavor with this red curry soup.

Ingredients:

  • 1/2 pound chicken
  • Snap peas
  • Bok choy
  • 1 shallot
  • 1 stalk lemongrass
  • 1 inch turmeric root
  • 1 inch gingerroot
  • 1 clove garlic
  • 1 tablespoon red curry paste
  • 2 chicken bouillon cubes
  • Noodles
  • Red pepper
  • Coriander
  • Onion powder
  • Cilantro
  • 1 lime
  • 3 and 1/2 cups water
  • 1/3 cup coconut milk

Directions:

  1. Slice and sautee gingerroot, turmeric root, garlic and shallot
  2. Add red curry paste and red pepper and coriander and sautee another 30 seconds
  3. Add water, lemongrass and bouillon cubes and bring to boil, then simmer 15 minutes
  4. Slice and fry chicken, then add
  5. Add noodles and onion powder to taste
  6. Add coconut milk, snap peas and bok choy right before the noodles are done
  7. Top with cilantro and squeeze a little lime juice on before serving
