Being bored by your breakfast often leads to skipping breakfast. A quick easy way to mix it up is using your favorite hot cereal, in this case Malt-o meal or cream of wheat, and turning them into muffins. This recipe is bound to work with oatmeal, too. Add a variety of other goodies like blueberries and make breakfast fun.


  • 1 1/4 cups flour
  • 3/4 cup Malt-o meal
  • 1/2 cup sugar
  • 3/4 cup of milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon (optional)


  1. Preheat oven to 400 degrees Fahrenheit
  2. In large mixing bowl, combine all ingredients
  3. Stir together until all ingredients are moistened
  4. Pour batter into greased or paper lined muffin pans, filling on 3/4 full
  5. Bake 18 to 20 minutes until center is firm to the touch
