I went home for winter break and was introduced to this great recipe. This recipe for mac and cheese is far superior to the kinds in a box and to make it healthier simply substitute in whole-wheat macaroni noodles.

 

Ingredients:

11/2 cups elbow macaroni

1/4 cup butter

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 cup flour

1 3/4 cup of milk

1 cup shredded cheddar

1 cup diced ham

 

Direction

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Cook macaroni as directed on the package.
  3. In a medium sauce pan, cook and stir butter, salt and pepper on medium heat until butter is melted.
  4. Mix in flour.
  5. Cook over low heat stirring constantly until mixture is smooth and bubbly.
  6. Remove from heat and stir in milk.
  7. Heat to boiling while stirring constantly.
  8. Let boil for 1 minute then remove from heat.
  9. Stir in cheese until melted.
  10. Stir ham into cheese sauce.
  11. Place macaroni in ungreased 11/2 quart casserole pan.
  12. Stir cheese sauce into macaroni.
  13. Cook uncovered for 30 minutes.
