College is expensive, but food doesn’t have to be. For a quick and healthy breakfast, all you need is about one dollar. With this dollar in hand, set off to the grocery store and stock up on bananas and eggs for delicious banana pancakes. No flour needed.

Ingredients

  • 1 banana
  • 2 eggs

 

Directions

  1. ‪Mash the banana in a medium sized mixing bowl until it is a smooth paste with no chunks in it.
  2. Add in the two eggs and stir it all into one complete mixture. This is your batter.
  3. Feel free to add some cinnamon, walnuts, or whatever else fancies you.
  4. ‪Prepare a greased skillet or frying pan on a burner at medium heat.
  5. Let the pan heat up a little first, and then take you batter in 1/2 cup portions and pour it onto the surface.
  6. The pancakes should be ready to flip after about 30 seconds.
  7. Since these are a little more flimsy than regular pancakes, I would recommend making them no wider than four inches in diameter or they may become hard to flip.
  8. ‪After they have been cooked on both sides, pull them off the pan and slide them onto your plate where they will sit ready to eat. If you are craving an even more intense banana flavor, cut up some extra banana slices to top your pancakes.
