This chewy, gooey homemade macaroni and cheese is an alternative dinner for vegetarians. I threw some frozen broccoli in to add nutrients. This recipe serves five to six people. You can invite some friends over to finish this up, or simply save the leftovers for tomorrow’s dinner.

Ingredients:

  • 1 ¾ cup uncooked macaroni
  • 5 tablespoons butter
  • ¼ cup flour[AE1] [ND2]
  • 3 cups shredded mild cheddar cheese
  • 2 ½ cups milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups frozen broccoli

Directions:

  1. In a pot, boil macaroni until soft. Drain.
  2. Add 2 tablespoons butter and mix well. Set aside.
  3. Microwave frozen broccoli for about 2 minutes.
  4. Preheat oven to 375 degrees F.
  5. In another pot, melt the rest of the butter.
  6. Add flour, salt, pepper. Stir well until it’s thickened.
  7. Add milk, stir in medium high heat for 5-7 minutes.
  8. Set aside. Add 2 cups cheese and mix well.
  9. In a casserole dish, mix macaroni with broccoli and the cheese sauce.
  10. Sprinkle the rest of the cheese on top.
  11. Bake for 25-30 minutes or until the surface turns brown.
