I had plenty of gingers and limes leftovers from my black tea recipe to cure a sore throat. I also had chicken on the freezer. So, I combined all of them together to make my dinner — kitchen creativity mode on. It may take some time to make this, but it’s worth of time because lime and ginger chicken is the best chicken dish I have ever made.

Ingredients:

  • 1 lb. boneless chicken, cut into pieces
  • 2 limes
  • 2 tablespoons melted butter
  • Ginger, 3 inches long
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon coriander powder
  • 1 tablespoon parsley

Directions:

  1. Collect zest of ginger and two limes with a grater.
  2. Squeeze lime to get its fresh juice.
  3. Combine pieces of chicken with lime juice, salt, pepper, parsley, coriander and zest of ginger. Marinade for an hour in the fridge. The longer the marinade time, the better the chicken will taste.
  4. Preheat oven at 425 degrees F.
  5. Arrange chicken on a greased baking sheet, then brush chicken with melted butter. Sprinkle some more salt and pepper as desired.
  6. Bake for 10 minutes or until the chicken are cooked thoroughly.
  7. Sprinkle lime zest on top, and serve with cooked white rice.
