Sometimes it’s nice to have meal where the meat, veggies and side dish are all mixed together in one perfect combination. Pasta Carbonara is a delicious, hearty dish that will have you going back for seconds. It is simple to make and a great meal to entertain guests.

Ingredients

  • 12 ounces pasta (bow tie pasta works really well)
  • 8 pieces thick cut bacon (diced small)
  • 1/2 medium onion (diced small)
  • 2 cloves garlic (minced)
  • 3 eggs
  • 3/4 cups finely grated Parmesan
  • 3/4 cups heavy cream
  • salt and plenty of black pepper
  • 1/2 cup peas

Directions

  1. Cook pasta noodles according to package directions.
  2. While noodles are cooking, fry the diced bacon till just crisp.
  3. Put the bacon in paper towel to drain excess grease, set aside.
  4. Pour our the remaining bacon grease in the pan, but don’t clean the pan.
  5. Fry onions and garlic in the pan till golden brown, set aside.
  6. In a bowl, whisk eggs, parmesan, cream, a pinch of salt and a generous amount of black pepper till smooth.
  7. When the pasta is done, drain and place in a bowl.
  8. Slowly pour the egg mixture on the steaming pasta while stirring till fully coated.
  9. Add peas, bacon, onion and garlic.
  10. Sprinkle extra parmesan on top.

Extra tips

  • Add garlic bread to make this dish complete
  • Meat lover? Use a whole package of bacon.
  • Veggie lover? Try adding asparagus or yellow squash.
  • Serving size is 6, so it’s a perfect dish to invite some friends over or to save the leftovers.
