Ingredients:

  • 2 cups whole almonds
  • ½ cup brown sugar
  • ½ teaspoon salt
  • 2 tablespoons water
  • 2 tablespoons olive oil
  • 3 tablespoons maple syrup

Instructions:

  1. After spreading the almonds over a cookie sheet, place in your oven and turn to 350 degrees. There is no need to preheat the oven – the almonds will roast better after being placed in a cold oven.
  2. Roast for 12 to 15 mintes. The color of the almonds will darken a few shades.
  3. While the nuts are roasting, mix the brown sugar and salt together in a medium-sized bowl. Stir well.
  4. In a medium-sized skillet, mix together the water, olive oil and maple syrup.
  5. Bring this mixture to a boil, but continue to stir to the mixture doesn’t burn.
  6. When done roasting, remove the almonds from the oven and pour into the skillet. Stir continuously until the almonds absorb the sweet mixture. Be sure to lower the heat while mixing the almonds.
  7. When the liquid is absorbed, pour the almonds into the bowl with the salt-sugar mixture. Stir with a fork until almonds are evenly coated with the sugar. Let cool, and enjoy.
