Monday

Coconut Cream Pops

Ingredients:

  • 1 12 oz. can fat-free evaporated milk
  • 1 13.5 oz. container coconut milk
  • ½ cup confectioners’ sugar
  • 2 teaspoons coconut extract
  • 1 teaspoon cinnamon

Instructions:

  1. In a large bowl, stir together the evaporated milk, coconut milk, confectioners’ sugar, coconut extract and cinnamon.
  2. Pour mixture into your popsicle molds or small plastic cups with wooden popsicle sticks.
  3. Freeze until firm. Enjoy.

Makes 10 popsicles.

Tuesday

Pina Colada Ice Pops

Ingredients:

  • 1 4 oz. can pineapple chunks in juice
  • 1 banana, peeled
  • 1 10 oz. can coconut milk
  • ½ teaspoon vanilla extract

Instructions:

  1. In a blender, combine pineapple chunks and juice, banana, coconut milk and vanilla. Puree until smooth.
  2. Pour mixture into your popsicle molds or small plastic cups with wooden popsicle sticks.
  3. Freeze until firm. Enjoy.

Makes 6 popsicles.

Wednesday

Elvis Frozen Pudding Pops

Ingredients:

  • 2 cups cold milk
  • 1 package instant banana pudding mix
  • 1 ½ teaspoons warm peanut butter

Instructions:

  1. Prepare banana pudding as instructed on the package. Allow pudding to rest until nearly set.
  2. Mash peanut butter into the mixture and stir until evenly distributed.
  3. Spoon mixture into your popsicle molds or small plastic cups with wooden popsicle sticks.
  4. Freeze until firm. Enjoy.

Makes 6 pudding pops.

Wednesday

Old Fashioned Vanilla Ice Pops

Ingredients:

  • 1 20 oz. bottle of vanilla cream soda
  • 2 cups water
  • ½ cup sugar
  • ¼ teaspoon vanilla extract

Instructions:

  1. Pour cream soda into a large bowl and whisk until no longer bubbly — set aside.
  2. Heat water and sugar in a saucepan over medium heat, stirring constantly until the sugar is dissolved. This will take about 5 minutes.
  3. Stir sugar mixture and vanilla extract into the cream soda.
  4. Pour the mixture into your popsicle molds or small plastic cups with wooden popsicle sticks.
  5. Freeze until firm. Enjoy.

Makes 12 popsicles

Thursday

Frozen Fudge Pops

Ingredients:

  • 4 cups nonfat dry milk powder
  • 1 ½ cups sugar
  • 1 cup all-purpose flour
  • ½ cup baking cocoa
  • ½ cup cold butter or margarine

Instructions:

  1. Combine the milk powder, sugar, flour and cocoa. Cut in butter until the mixture resembles coarse crumbs. (This mix can be frozen in an airtight container for up to 6 months).
  2. To prepare the pops, whisk 2 cups of this mix and 2 ½ cups water in a saucepan. Bring this to a boil. Reduce heat and simmer for 2 minutes or until it thickens.
  3. Remove from heat and stir in the vanilla.
  4. Fill your popsicle molds or small plastic cups with wooden popsicle sticks.
  5. Freeze until firm. Enjoy.

Makes 10 popsicles.

Friday

Strawberry Lemonade Ice Pops

Ingredients:

  • 1 12 oz. can of frozen lemonade concentrate
  • 3 cups cold water
  • 1 16 oz. package frozen sliced strawberries

Instructions:

  1. In a large pitcher, stir together the lemonade concentrate and water.
  2. Place strawberries in a blender and puree until smooth.
  3. Stir strawberry puree into the lemonade mixture and stir.
  4. Pour into your popsicle molds or small plastic cups with wooden popsicle sticks.
  5. Freeze until firm. Enjoy.

Makes 12 popsicles.

Saturday

Monkey Tails

Ingredients:

  • 10 ice pop sticks
  • 5 very ripe bananas, peeled and halved
  • 1 tablespoon butter
  • 10 tablespoons chopped peanuts

Instructions:

  1. Insert 1 pop stick into the cut end of each banana. Place the bananas on a wax paper-covered baking sheet and freeze until the bananas are frozen, about 2 hours.
  2. Melt the chocolate chips and butter in a microwave-safe glass bowl in 30-second intervals. Stir after each interval.
  3. Dip the bananas in the melted chocolate, spooning the chocolate over the banana to cover it completely. Roll in peanuts.
  4. Re-freeze bananas until the chocolate is completely firm. Enjoy.

Other delicious toppings: Coconut, white or milk chocolate chips, butterscotch drizzles, colored ice cream sprinkles, peanut butter dips.

Makes 10 monkey tails.

Sunday

Classic Orange Pops

Ingredients:

  • 1 3 oz. package orange gelatin
  • 1 envelope unsweetened orange punch drink mix
  • 1 cup sugar
  • 2 cups boiling water
  • 2 cups cold water

Instructions:

  1. In a large bowl, dissolve the gelatin, drink mix and sugar in the boiling water.
  2. Stir in cold water.
  3. Pour mixture into your popsicle molds or small plastic cups with wooden popsicle sticks.
  4. Freeze until firm. Enjoy.

Makes 16 popsicles.
